While I was working out with Christine today she asked how my diet was going. I told her about how it has gotten really easy for me now that I have been eating more frozen veggies and sticking mostly to peas and green beans. I thought she would be happy with this but she wasn’t exactly thrilled that I wasn’t eating all the vegetables this world has to offer. So, she has challenged me to eat 10 different veggies this week, and my response is…are there 10 different vegetables out there? (I swear I am terrible about this whole diversifying my vegetable intake) Anyways, I need to know from you guys which veggies I need to try. Apparently there is a “rainbow” of veggie choices and I need to taste it so any suggestions would be appreciated.

i personally really like broccoli and cauliflower and any type of pepper, but i dont know how much nutrition peppers give you
i like sugar snap peas, broccoli, cauliflower, yellow and orange bell peppers, carrots, zucchini and squash... among others. i pretty much like any veggie!
I love LOTS of veggies:
artichoke, broccoli, any color bell pepper, carrot, cauliflower,cucumber, celery, squash, spinach, zucchini, and eggplant (although apparently not many people like eggplant, I LOVE it!)
I used to hate peppers of all kinds, but now I'm pretty much obsessed with all of them. Zucchini, squash, SWEET POTATOES, asparagus, and I'm not quite sure if this last one is a fruit or vegetable, but... jicama. It's fun to munch on as a snack and it's absolutely delicious. Ricky, you're doing an amazing job and I can't wait to give you the biggest hug ever the next time I see you! Love youuuu!
Oh yeah! Mushrooms and artichokes, too!

Broccoli, grilled asparagus, steamed edamame, raw carrots, chickpeas.
I really like the Green Giant single serving steamers. The 'Healty Weight' and 'Digestive Health' are my favorites.
Adding cayenne pepper to almost any vegetable is a good alternative to salt (but obviously a different flavor), and cayenne has many health benefits.
canned chopped spinach.. just make sure you put lemon juice and salt on it.. then just pop it in the micro. Easy & yummy. Munch on green bell pepper slices along with baby carrots. Good stuff. Jicama is good. Bamboo shoots are good too! Oh, and artichoke hearts. Yum!
Well my friend you have help with the veggies, but I must comment on the picture. In the picture of "Vegetables", there was one tomato. Get that fruit outta here!
Ricky, darling...you and I are hitting the grocery store. Then, we're going to cook some veggies. Then, we're going to eat them. Then, all will be right with the world.
